It is believed that the ancestors of the Oromo tribe in Ethiopia were the first to discover and know the tonic effect of the coffee bean plant. No direct evidence has been found to reveal exactly where coffee grew in Africa, or who used it as a tonic, or even known about it before the seventeenth century. The earliest reliable evidence, whether of drinking coffee or knowing the coffee tree, appeared in the mid-fifteenth century, in the Sufi monasteries in Yemen in the south of the Arabian Peninsula. Coffee has spread from Ethiopia to Yemen, Egypt and the Arabian Peninsula, and by the fifteenth century it reached Armenia, Persia, Turkey and North Africa. Coffee has spread from the Islamic world, to Italy, then to the rest of Europe, Indonesia, and to the Americas.Coffee fruits containing coffee beans are produced by several types of evergreen shrubs found in the coffee tree. The two most common types are Coffea canephora (also known as Caffea robusta) and Coffea arabica; The least common species are liberica, excelsa, stenophylla, mauritiana, racemosa. They are mostly grown in Latin America, Southeast Asia, and Africa. Once ripe, they are picking coffee beans, processed, and dried. The seeds are then roasted, before undergoing several physical and chemical changes. Where they are roasting in varying degrees, depending on the desired flavor. Then it is ground and boiled to make coffee. It can be prepared and served in a variety of ways. The Republic of Yemen is considered one of the first countries that cultivated coffee and exported it to the world, with evidence that coffee is called Arabica or Arabic coffee originating from Yemen; The most important and luxurious type of coffee is Mocha, a perversion of “Mocha coffee” in reference to the famous Yemeni port (Mocha). The port of Mocha is considered the first from which merchant ships set out and exported coffee to Europe and the rest of the world. Yemeni coffee is famous for its special taste and unique taste that differs from other types of coffee grown and produced in other countries of the world.
